Vegan Cream of Cauliflower Soup

This month has been pretty crazy so far. As you all know we had to put our Shine down at the beginning of the month, but what you don’t know is that Al’s mom was hospitalized for a week with pneumonia – she is doing much better now.  Then I got a flat tire in my car, not a big deal since I was at work and was able to call CAA.  However, that very same night I had an appointment, so I took Al’s truck while he went to purchase me a new tire.  On my way home the clutch went kaput while I was turning from Ottawa Street onto Homer Watson.  If you live around Kitchener/Waterloo area you know that this is an incredibly busy intersection and it’s notorious for accidents.  Luckily (to at least try and find a positive), this happened after 8pm which resulted in less traffic to be blocking.  Once again I had to call CAA, but this time I needed them for a tow.

The really odd thing was that we knew that the truck was getting old and we were already talking about getting a new one. We always said “let’s hope the truck lasts longer than Shine”…and what do you know – exactly a week after we put her down the truck took it’s last breath as well.  On a good note, we have purchased a Pontiac Vibe and we are looking forward to our new (used) car.

On the cooking front we are on a soup theme at the moment – must be fall.  I love making a batch of soup on Sunday that we can enjoy through the week.  This week I decided to make Cream of Cauliflower Soup from the Skinny Bitch Cookbook.  This is a recipe I have made a number of times in the past year.  I love that you roast half the cauliflower as well as boil it.  In fact, I love the roasted part so much that sometimes I roast the entire cauliflower.  Roasting creates a really intense caramelized flavour that can’t be beat.  The only thing I changed from the recipe today was that I didn’t have white pepper so I had to use black, which does change the presentation somewhat but definitely not the taste.

While I was making the soup Al went and checked our lottery ticket…our luck doesn’t appear to have changed much – maybe next week!
