With all this extremely hot, sunny weather that we’ve been having our vegetable garden is thriving. Over the weekend I picked the last of the lettuce, my first six zucchini and the radishes are still going strong. The cucumbers, peppers and tomatoes are coming along as well.
This past weekend I made potato salad for the first time ever! I have always been hesitant to make potato salad for two reasons: 1) I always worried that I would overcook the potatoes, and 2) My Mom makes the world’s best potato salad – so it’s hard to compete.
I started off with a bag of Blushing Belle potatoes and the best thing about using these potatoes was that the bag specifically told me how long to boil the potatoes for so that I wouldn’t overcook them. Who knew it could be this easy :)
Once the potatoes were cooked (to perfection of course), I chilled them with a little salt, pepper and 2 tbsp. of cider vinegar.
Once chilled I added in ¼ cup diced celery and ¼ cup diced green onions, 1 tbsp. chopped fresh dill from my garden, 1 tsp. paprika (not from my garden) and 2 tbsp. of vegenaise (vegan mayonnaise). The regular mayo is okay to use as well, it just loses the vegan classification.
I mixed it all together and…Voila! Fantastic Potato Salad, or FPS if you prefer webspeak.
It wasn’t quite as amazing as my Mom’s – I don’t think I will ever be able to replicate that. Plus it’s nice to have a special dish that someone else makes if you request it.
