Vegan Breakfast Fry-Up

After a night of partying, who doesn’t like a good fry-up the next day – especially a fry-up that consists of tofu scramble, vegan sausages and salt and pepper popovers!

Tofu Scramble

1 tbsp. grapeseed oil
half a block of firm tofu, crumbled
half an onion, diced
¼ of a red pepper, diced
2 mushrooms, chopped
2 handfuls of baby spinach
1 tbsp. basil
salt and pepper to taste

Heat oil in a medium frying pan; add the onion, red pepper and mushrooms and sauté until soft 2- 3 minutes.  Add spinach sauté for 1 minute more.  Add the tofu and basil.  Cook for 2 – 3 more minutes until the tofu is heated through.

Vegan sausages – We used Yves Meatless Breakfast Patties.  These patties are precooked so you just need to heat them 2 or 3 minutes per side.

Salt and Pepper Popovers – We had leftover batter from when we made the salt and pepper popovers so I made a little cake for us to eat in the morning.  I warmed up the cake covered in foil in a 250 degree oven for about 10 mins and it did the trick of warming it through.

And nothing like a good fry-up to get you back in the game.
