New Year’s Resolution

In keeping with our  New Year’s Resolution to get back on track with our healthy eating, our breakfast on New Year’s Day was tofu scramble with onions, mushrooms and spinach along with smoky maple Tempeh bacon (which is super yummy, I could eat it every day). We also enjoyed hash brown patties and whole wheat toast with earth butter. After the picture was taken, I added Wild Blueberry jam to my toast (which I am also quite fond of).

After a night of a few (read as too many) drinks we needed a bit of a grease fix and the hash browns provided us with that.  In the past we would have been inclined to head over to McDonald’s for a sausage McMuffin, but since one of those is more than half of your daily salt and far too much fat, we decided to create our own healthier “grease fix”.

Today we are going to do the P90X Stretch, which is an hour long and is super-great, especially since we both went crazy on our legs and back workout yesterday so we really need to stretch everything out.  I am also going to start cooking up a storm so watch for new and exciting recipes in the near future.
